I'm actually making this tonight. However not much for tyme but thas just personal preference. I also tend to serve this over a bed of red beans and rice. I know it's unhealthy and lots of calories but it's ohhhh soooooo goood. Thanks for giving me a bit of a reminiscent reminder of growing up. If you lack thyme, I'd either leave it out or sub it in for oregano if you want the dark taste of thyme, or rosemary if you want the same texture and don't mind a pop of bright, faint mint.
